Soo.... if I'm arriving in Munich around 6pm at the airport on the 18th and need to be in Ulm by morning of the 20th, what's the best way to get there? Stay in Munich overnight and a morning train to Ulm? Try and get an evening train to Ulm right away? And how long does it take to get from the airport to the train center, and do I need to make a seat reservation or if I get a railpass is that enough?

The Munich airport is somewhat distant from the actual city. You have to calculate about 40-50 minutes by public transport to get to the main train station from the airport. This is only the actual travel time, any time you need for immigrations, customs, waiting for your bags and so on will be added to that. Luckily, it's a direct connection so no switching train necessary.

Going to Ulm from Munich takes between 75 minutes and 2 hours by train, depending on what connection you take. So "overnight" would be something of a stretch... There are trains as early as 5:30, and as late as midnight, with many options in between. Calculate about 20-30 Euros for the ticket, possibly a bit more if you want to use one of the express trains. While it is possible in some trains, don't buy the ticket directly in the train. It's more expensive than if you go to the counter at the station.
A reservation isn't strictly necessary; however, if you don't make one, it is entirely possible you won't get a seat and will have to stand for the whole distance. If you reserve a seat, they are required to provide you one, even if it means they'll have to upgrade you to 1st class for free.

Whether you want to spend the time in between in Munich or Ulm is entirely up to you. Both are cities worth seeing. Munich if far bigger, but it's also more expensive, so you'll likely get cheaper lodging if you go to Ulm right away.
