No noodle soup

AKA Starving student wanna eat ramen but can't afford to.
Serves 1

Ingredients:
1 leek
2 stock cubes (beef)
Soy sauce
1 soft boiled egg

First cut the leek in two lengtwise.
Clean anf cut off the green end but leave the butt.
Keep some young green for decoration or freeze for a later meal.

Cut the leek in thin stripes for imitation noodles.
Put it all in a pot or microwave bowl and add half a liter of boiling water.

Seep for a few mnutes till the leek is soft.
In the mean time you can boil an egg.

Remove the leek noodles without getting rid of the water and put them in a nice bowl.
Add the stock cubes to the boiled water and stir till dissolved.
Add soysauce to taste.

Pour the soup over the noodles, decorate with leek green and the eggs.
Then enjoy your meal.

I use 2 cubes because I prefer a strong flavour. If the stock you use has a strong flavour use 1.
You can always add more later after all.
Boiling veggies means you loose some minerals, by reusing the water for the soup you will keep them in your meal.
For a more filling meal add more types of veggies. Just make sure to either boil or grill them.
Don't like eggs? Just switch the egg and stock cube with meat and fitting cube. Chicken with chicken stock ectr.

so cool - using leek for noodles is really creative! (and wow I LOVE soft boiled eggs yummmm)
